SOAKING

Night method
  • Put 1 cup of beans in 4 cups of cold water.
  • Let stand 12 hours.
  • Drain the soaking water and cook according to recipe.

Quick method
  • Put 1 cup of beans in 4 cups of cold water.
  • Boil for three to five minutes.
  • Remove from heat, cover and let stand for 90 minutes
  • Drain the soaking water and cook according to recipe.


Microwave method
  • Put 1 cup of beans in 4 cups of cold water.
  • Put in the microwave in a covered dish for 10-15 minutes.
  • Let stand for 60 minutes.
  • Drain the soaking water and cook according to recipe.

BAKING

  • Put the soaked beans in a cauldron with water.
  •  Bring to boil, cover and reduce heat to medium.
  • Simmer until tender.
